This is perfect for a lazy Sunday morning brunch or an afternoon treat with a cuppa – best eaten sliced, toasted and buttered 🙂
What you will need :
280g plain flour
2tsp baking powder
100g castor sugar
100g dark brown sugar
2 ripe bananas
2tsp ground cinnamon
2tsp castor sugar
[Preparation… Mash the bananas in a bowl, melt the butter in a separate bowl, mix the 2tsp of cinnamon with the 2tsp of castor sugar in a small dish and Line a 2lb loaf tin. Pre heat the oven to 170C]
Whisk the eggs and sugars together, until fluffy. Slowly add the mashed bananas, fold in the flour and baking powder. Add the melted butter and make sure the ingredients are all thoroughly mixed together.
Pour mixture into the lined tin, sprinkle the cinnamon/sugar on top and bake in the oven for 1 hours (or until skewer comes out clean).
Leave to cool, before slicing.
